Hello Friends ,welcome to one of the most fun regions of the United States, this region covers Texas,Arizona,Nevada,Southern California and of course New Mexico,
remember the alamo! so come out and get your Burritos,Quesadillas,tamales,and all those classic dishes from the Southwest with the great influence of mexican heritage of this large region, that at one point belonged to mexico and thats where the alamo in SAN ANTONIO TEXAS is remembered for, you will truly enjoy this food as i have and remember TEX-MEX is as american as apple pie!

American Culinary Heritage

Hello Everyone! I cannot believe we are in the middle of our Southeast region of the United States! It's one of my favorites areas. Back in 1996 when I lived in Atlanta , Georgia I was able to learn and enjoy Southern Food, which now has spread all over the country. You can find this type of food in most states in the US. Come and join us as we continue to travel this region and sample Southern style Fried Chicken, Collard Greens, Hush Puppies, Fried Okra, Gumbo, Jambalaya, Po Boy Sliders, just to name a few! Do not forget to pick up your copy of "WHITE HOUSE CHEF" recipe book by Walter Scheib, my friend and former Chef of the White House. I worked some time with Walter back in the states and I can tell you that you will enjoy this book as much as I did. Not only great recipes, but some great stories from the ultimate kitchen in the land as we know it back in the U.S.A.

Hello Everyone ! I must say its been a busy but very exciting week with the launch of the American Culinary Heritage at the Hilton. It has truly been an honour to have my good friend Chef Walter Scheib, former White House Chef and winner of Iron Chef America 2006 here in Trinidad for the food promotion opening this Friday October 9th, 2009. This weekend the Hilton Trinidad gave the opportunity to the TTHTI students and Top Trinidad and Tobago Chefs to participate in a culinary seminar and to interact with Chef Scheib. Like they say 'a picture is worth a thousand words"... it is a pleasure to share with you some shots of this wonderful and unique experience!
